Cropping sets the area of each page that gets displayed. Nothing is re-drawn and nothing is re-encoded, so the text stays sharp and selectable and the file loses no quality at all. The flip side is that the trimmed material is still in the file — software that ignores the crop box can show it again — so this tidies margins rather than hiding anything.
