Why so many sizes
A browser tab wants 16 or 32 pixels, a bookmark bar wants more, an iPhone home screen wants 180, and Android wants 192 or 512 for the install prompt. Handing every one of them a single large image means each scales it down itself, usually worse than doing it properly once.
The .ico holds the 16, 32 and 48 pixel versions in one file, which is still what older browsers reach for first. Modern ones prefer the PNGs.
A wide logo is fitted inside a square rather than cropped to one, so the ends are kept and the space around them stays transparent. Start from something square and simple if you can — at 16 pixels there is room for a shape, not for words.

Why do I need so many sizes?
A browser tab wants 16 or 32 pixels, an iPhone home screen wants 180, and Android asks for 192 or 512 when someone installs your site. Give them all one large image and each scales it down itself, usually worse than doing it properly once.
What is inside the .ico?
The 16, 32 and 48 pixel versions, in one file. It is still what older browsers reach for first, which is why it is worth having alongside the PNGs even though modern browsers prefer those.
My logo is wide. Will it be cropped?
No. A wide logo is fitted inside the square with transparent space around it, so the ends are kept. Cropping to a square would cut them off, which is rarely what anyone wants from their own logo.
What makes a good favicon?
Something square, simple and high contrast. At 16 pixels there is room for a shape or a single letter, not for words — a full logo with a tagline turns into an unreadable smudge at that size.
